Mom…..what’s for supper??
I bet that sounds familiar! I know it used to in my house. But I fixed that problem by meal planning. Each week I look through my cabinets, deep freeze and refrigerator to see what I have to work with. Then I sit down with a glass of wine or a cup of tea and plan out our dinners for the following week.
I grab a scrap piece of paper and decide what we will eat each night thinking about the things I already have to work with. Two things are consistent on nearly every one of my weekly meal plans: Leftover night and Sunday dinner at Mom and Dad’s.
This is my meal plan for next week…..
I use the plan to make a shopping list of any items I may to head to the grocery store and get. Then the meal plan goes onto the refrigerator. If anyone wants to know what is for supper they can figure it out with a quick glance at the fridge. Some ways to make your meal plan even extra amazing is to add the cook for the night. If you have older kids they can choose a night to cook and you will get a little extra relaxation time!
Goulash is one the easy and quick meals I like to whip up when I have too many leftovers in my fridge. It can be made many different ways but here is a sample of one of my versions:
My Version of Goulash
1 pound cooked and drained ground meat (venison, beef, or turkey)
Diced green peppers
Corn, green beans, any leftover veggies you have in the refrigerator
Cook all the above ingredients in a pan on the stove until hot.
Toss in left rice, noodles or macaroni.
Add a little vegetable or beef broth and let cook until noodles or rice are soft.
Once everything is cooked through toss a little cheese on top and serve with homemade bread or biscuits.
**I am not great with measuring when I cook. I like to use recipes as guides so experiment and add in whatever you have handy! I am sure it will be yummy!
